So my doctor has pulled all the tricks out of his hat as long as possible to keep me from going through the nightmare of a barrage of antibiotics and nasty drugs to help bring my chronic tick borne Babesia infection down to a tolerable level, but it didn't work, and now I need to up the ante and barrage my body with these nasty drugs. All six of them.
One of the drugs HAS to be taken with a fatty meal or it will not absorb.
The drug costs $900 a bottle, so this is important. Short of sticking my face in a can of lard, I need a list of good fats and some recipes.

This may be timely for others who are trying to lower their cholesterol and change health habits.

I don't have any ideas for you off the top of my head, but can you define "fatty" as percentage of fat calories to total calories? Are you looking for 40 percent fat? More?
How about roast with gravy and mashed potatos, a good Southern staple. ;-) But did you say healthy?
Can you add supplements such as Omega fatty acids?
