I am so sick of trying to think of something to cook for dinner...I'm tired of my own cooking. I need suggestions. Help! Simple weeknight dinner ideas, please!

:rotfl:...and you are still so young! I hear you though, after Steven left for college, I gave it up. It's hail being a domestic goddess, isn't it? ;-) Excuse me while I go fold more tighty whities!

P, your 'tar reminds me of Nicole Kidman. Not sure why.

I can't help you with the cooking. If I don't eat at my folks', I have popcorn or leftover chocolate. It's not that I can't cook; I just refuse to.

I hear that slow-cooker stuff is popular these days?

My family loves chicken fajitas - pretty quick and easy to make.

Cut thawed chicken breasts into strips and marinade in fridge for an hour w/ onion slices and lime juice.

Cook all of it w/ a dab of butter and some pepper in a frying pan (low to medium heat) w/ cover.

In another pan sautee sliced mushrooms in butter.

Drain most of the juice out of chicken pan and put chicken in bowl.

Put mushrooms in a bowl.

Slice up an avocado, put grated cheese, salsa, sour cream in a bunch of small bowls.

Everyone gets a plate w/ a fajita shell and double napkins!

All leftovers get Saran Wrapped and put in fridge for next meal (this is a big selling point when there are hungry teens in the house)!

We would also do beef w/ red pepper instead of chicken for a change and when I cook for vegetarians I do portabella mushroom strips and fennel instead of beef or chicken.

:lol: Yes, it gets worse as you get older. Fortunately MANgo likes to grill or he would not eat part of the week.

You know what's easy, Oven Stuffer Roasters. Cooks itself. I usually make a simple yam dish with it in winter. Pour yams in corning dish, add apple sauce with cinnamon, top with brown sugar, microwave for about 7 minutes, then add oatmeal on top and grill till slightly brown. I also make stuffing too and some veggies.

There's usually enough chicken left and the next night, I make linquini with olive oil, cut up the chicken chunks, add some garlic and sometimes some diced tomotoes. Add seasonings and voila, dinner.

First of all, you did not say healthy....:lol:
  • crock pot is your friend, I have cajillions of recipes
  • shake and bake pork chops
  • lasagna
  • tacos
  • quesadillas
  • fancy sandwich night (reuben, club, philly)
  • soup w/grilled cheese
  • stuffed bell peppers
  • crawfish casserole (i have a recipe and it is super easy)
  • alfredo w/ mushrooms

Everything else you buy premade! :D

I like the Royal Orchid suggestion - I've got them programmed into my phone for these occassions! ;-)
