I think we should have a party! Everybody bring your favorite delicious yet somehow still nutritious dish, we'll put a flame to the fire pit and turn on some music! Whaddy'all think?

There was a thread, down a bit, that was titled 'Never Eat Meat Again.' When in Florida, I enjoyed reading it and gaining insights into various health and fitness issues and also enjoyed adding a couple posts myself. Presently, as I write this, I am grilling bananas for a snack. And I am loving my newfound cooking skills.

During my two years in Seagrove, I lived in a nice place, but it only had a hot plate, lacking the customary stove and oven. Since moving back to be with my kids, I HAVE A STOVE AND an OVEN. And wow, I discovered cooking light. I took the advice so often rendered about sticking to the outer edge of the grocery, avoiding the processed food and choosing fresh produce instead.

I am now a mad man in the kitchen. I always thought eating fresh vegetables and cooking like I am now was difficult. Totally contrare, my dear. I simply buy things like potatoes, broccoli, green onions, celery, mushrooms... heck, anything in the produce section, and I am off to the races. All I do is put some extra virgin olive oil in the pan, throw in my consistently cut pieces, according to how fast they cook, and bam, before long I am serving up restaurant quality stuff.

I got some take home the other night and was greatly disappointed. My simple home cooking blew their ill prepared offerings away. And an often overlooked part of cooking is that the mere act of cutting up my vegetables is therapeutic, as is listening to the voice of the hot skillet. I also am teaching my kids how to cook in the process.

In addition to the healthy cooking I'm doing, I'm working out every single day, running, playing tennis, doing numerous push-ups, pull-ups, yoga and plyometrics. I am really feeling fit. I bought some new jeans today, size 30. Okay, maybe more information than you needed to know. But my point is, eating healthy is so much easier and much more enjoyable than I ever imagined.

I love Cooking Light too! I am a subscriber. I keep the old issues and look back at recipes I made that I enjoyed (and the family liked).

Congratulations on your healthier lifestyle. I too am making that change in my life. I can relate about the cutting of the veggies and cooking your own healthy meals as being therapeutic. I feel the exact same way. Good for you. Keep up the good work. Glad to know everything is going well for you!

As the weather starts to warm up (FINALLY) I move from heavier meals like soups and stews to salads and fruit. I've lived an entire summer on nothing but, simply because it was what I craved and we had an abundance in our yard...

This morning I made my "Spring Fever" salad which consisted of organic baby lettuces, mango, strawberries, oranges, kiwi, apples and fresh oj as a "dressing". It was JUST what I needed.

Thanks for the great thread and all of the posts have been wonderful to read.

I wish I could eat just salad and fruit. I think I would DIE if I did that for more than a week. I love all food in all its forms. but salad and fruit would be so healthy and maybe I would get so skinny people would say I look sickly which is my goal in life :)rolling:).

I think you have to just listen to your body. Some people get very sick doing what I did. It doesn't agree w/them. Perhaps I am just one of those who's ancestors ate that way or something.... anyway, even having it once in a while is a great plus - and btw it is amazing how much energy I had alllllll day :D

Thanks to this thread, I happily wasted my afternoon on the cooking light website. YEAH!! I think my boss won't be so happy about it though!!
