The chorus of frogs from our old farm in DFS is one of my best childhood memories. My mom always told us it was the frogs singing goodnight to us. There were also lots of snakes, too, though! It's all part of the bargain!

CRISPY FROG LEGS RECIPE
5 lbs. small frog legs
3/4 cup lemon juice or vinegar
Crushed ice
1 cup milk
6 eggs, separated
2 tbsp. olive or vegetable oil
1/4 tsp. salt
Salt and pepper
1 1/2 cups all-purpose flour
Vegetable oil

Wash frog legs thoroughly. Place in a large Dutch oven; sprinkle with lemon juice, and cover with crushed ice. Refrigerate 1 to 3 hours.


Combine milk, egg yolks, olive oil, and 1/4 tsp. salt; mix well. Beat egg whites until stiff; fold into batter.

Sprinkle frog legs with salt and pepper; dip each in batter, and dredge in flour. Fry until golden brown in deep oil heated to 375 degrees F. Drain on paper towels. Yield: about 6 servings.

5lbs? Man, that would be a lot of little frogs!

They have itty bitty bones, too, so when you're done eating the legs you have a mountain of them on your plate and it looks like you've just done a massacre. Frog legs are a once-in-a-lifetime culinary experience, no more! :yikes:

If you run over frogs in your driveway and it's a sunny day after, they make great bookmarks...especially the big toads.

Just kidding...frogs are nature's angels, especially down in buggy SoWal. If you get rid of your frogs, you'll have skeeters the size of helicopters this summer. You'll have 'em anyway, but the frogs will eat a lot of them. Now if we could just find something hungry enough to eat palmettos...
