This is a family favorite:

Black Bean Salsa

1 large onion, chopped (I use red)
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2-3 cloves garlic, minced
1 can whole kernel corn, drained
3 cans black beans, rinsed and drained
10 roma tomatoes, chopped
1 bunch cilantro, chopped
juice of 2 limes
1/4 c. balsamic vinegar
2 jalapenos, chopped fine
1/2 jar mexican salsa
1 can diced black olives

Drain everthing! Mix together and chill overnight(important). Serve with tortilla chips.

Makes a TON!!! you can half the recipe for smaller gatherings..
Lots of chopping, but worth it!

So yummy--but they are a challenge. Chimichangas are easy though.
Never made homemade tamales, but my cousins do every Christmas.
Made huevos rancheros this morning--good way to start the day. :)

This cheese dip thing is intriguing to me.

AFAIK, and please someone correct me if I am wrong, there is not really a cheese dip tradition in Mexican restaurants in Colorado.
You get your chips and salsa.
You can order guac if you want.
And of course, in all the stores they have those jars of American cheese processed crud with little dots of jalapeno. And many stores in Denver did carry the white specialty Mexican cheeses, so someone was using the cheese for something.

However, at Denver's Mexican restaurants, the cheese dip stuff, the white Mexican cheese dip like they have at Pepper's here, was unknown.

I hadn't had much coffee, I was still a little groggy. Maybe Kurt can move it if he feels the need....
