I have found no great Hamachi (yellowtail or Japanese Amberjack) down here except at Basmati's (excellent sushi), and have had none anywhere else since leaving Los Angeles. the amberjack from the Gulf is not sushi grade. Someone tried to pawn snapper off to me as yellowtail once...eewww.
SWGB, does OFFH have good yellowtail Hamachi? I've never eaten there. I'm still protesting the great Mexican place being kicked out. Maybe it's time for me to get over myself on this one. Is Yoshi the sushi chef that used to be at Harbor Docks when their sushi was worth a $#!t?
There are several kinds of tuna that are good for sushi (maguro or bluefin tuna is best), but none are caught around here in abundance. They're deep sea fish caught with specialized boats and rigs.
It's called the world's luckiest fishing village, and there are many other types of fish that are specialized in. Several species of snapper, grouper, amberjack, triggerfish, ahi tuna, mahi... and great shrimp (try royal reds some time)...we just don't specialize in sushi fish. Most sushi fish come from the Pacific.
