Brandy and Orange-Mashed Sweet Potatoes


8 servings

7 large sweet potatoes, about 3 pounds
1 stick unsalted butter
1/2 cup light brown sugar
3 large eggs
3/4 cup fresh orange juice
1/2 cup heavy cream
1/4 cup brandy
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt

Preheat the oven to 400 degrees F.
Place the potatoes on a baking sheet and bake until tender, about 1 hour. Remove from the oven and let rest until just cool enough to handle.
Lower the oven to 350 degrees F.

While still somewhat hot, peel the potatoes and place in a large bowl. Discard the skins and tough, stringy fibers. Add the butter, and with an electric mixer, beat out the lumps. Add the sugar, eggs, orange juice, heavy cream, and brandy, and mix until smooth. Add the cinnamon, nutmeg, and salt, and mix well. Re-season, to taste. Top with marshmellows (if you like)

Bake until puffed and slightly golden, about 20 minutes.

Publix usually has uglis year-round and Frest Market also has some heirloom tomatoes.

When it's Thanksgiving at our home, we'll have sauteed plantains as a cranberry sauce alternative. It really does work well with turkey. (Got the idea from one of the sandwiches at Emerald Coast Coffee)

When it's Thanksgiving at our home, we'll have sauteed plantains as a cranberry sauce alternative. It really does work well with turkey. (Got the idea from one of the sandwiches at Emerald Coast Coffee)

aw, thank you beachmouse, but I'm in Chicago. We rarely have good tomatoes at any time of the year. :lol:

Then I should only give you half the recipe. :lol: But here's a close version of mine. I was too lazy to go downstairs and get mine.


The Dressing:
  • 1 9x13-inch pan of cornbread, crumbled
  • 10 white or whole wheat bread heels (left out overnight)
  • poultry seasoning (see below)
  • rubbed sage (see below)
  • 1/2 teaspoon freshly ground black pepper
  • 3 large stalks celery, chopped
  • 1 large onion, chopped (2-1/2 to 3 cups)
  • 1 large green pepper, chopped
  • 3/4 cup butter (1-1/2 sticks)
  • 4 cups chicken stock
  • 1 cup turkey pan drippings (from cooked turkey -- you are cooking a turkey, aren't you?)
  • 3 large eggs, slightly beaten
Preheat oven to 375?F.

Crumble the cornbread and white bread into a very large baking dish or pan (This is the pan you will cook your dressing in, and you need room to stir it while it's cooking).

In a large skillet, saut? the celery, onion and green pepper in butter over medium heat until onion is transparent. Combine the saut?ed vegetables with the bread crumbs and mix well. Note: The dressing up to this point can be prepared an hour or so in advance.

When you are ready to bake the dressing, add the beaten eggs, chicken stock and turkey pan drippings, and stir. (You may need a little more chicken stock -- better if it's too moist than too dry; the uncooked dressing should be a little on the slushy side.) Add 2 teaspoons poultry seasoning, 1/2 teaspoon rubbed sage, black pepper, and mix thoroughly.

After baking for 15 minutes or so, stir dressing down from the sides of the pan so that it cooks uniformly (my mother's term was "rake through it"). Check the seasonings; that is, taste it. If you don't taste enough sage for your liking, add 1/4 teaspoon or so with a little chicken stock, stir it in, and taste again. Careful, a little sage goes a long way.

Total cooking time should be about 30 minutes.


****Most times, I omit the green pepper and I add more black pepper than this calls for--but I guess that's a matter of taste. I NEVER add the eggs..I don't feel they're necessary. I do always add a can of cream of chicken soup though. It makes it creamier.


YUM, DD! I add Jimmy Dean Sausage and cranberries, too....always extra broth or cream of chicken soup!!!

All these good ideas!! I hadn't thought about adding cranberries. Thanks, Lynnie. Just got back from Chan's Wine World next to Grand Boulevard's Publix near Sandestin. Hadn't been in since the expansion. Lots of great cheeses to select from. Nice place for lunch, too. I want to go back and sit in those comfy looking chairs after Thanksgiving and have a cheese plate and a glass of wine.

Sounds delish! I forgot that sometimes I add the boiled eggs too, depending on who's coming.
Man, I could eat a huge bowl of butter beans about now. :love:
