I've had excellent luck with a product called Andy's Fish Seasoning. Its a mixture of very fine ground corn meal and wheat flour with added spices. Really delish and have also used it for fried green tomatoes and okra.

They've got it at Publix. $1.49 for a bag that says it will do 8 Lb. of fish.

The best thing I can offer up here is that you need to use CRACKER meal instead of corn meal. Season as you would the other but makes a great batter that is not as "gritty" as corn meal.

We (well, actually I) have always used Zatarain's Fish-Fri (which is basically cornmeal) with a few good shakes of Creole seasoning and seasoned salt. But after reading this thread I might get branch out a little.

And SGG is correct about the paper bag. We use two of them whenever we fry a turkey. Hasn't dawned on me to use one for fish. Of course, unless it's a couple of small whitefish filets or shrimp or scallops with my electric skillet, I don't allow fish frying in the house :D
