This one is from Bon Appetite...looks hard but is easy. Just takes forever to chop the chocolate....use a serrated knife.
Cake
12 ounces bittersweet chocolate or semi-sweet chocoate, chopped
3/4 cup unsalted butter, cut into pieces
6 large eggs
12 tablespoons sugar
2 teaspoons vanilla extract
For glaze
1/2 cup whipping cream
1/2 cup dark corn syrup( I have left this out before)
9 ounces bittersweet or semi-sweet chocolate, finely chopped
Chocolate shavings
Make cake:
Preheat oven to 350 degrees. Butter 9 inch springform pan. Line pan with parchment or waxed paper. Wrap outside of pan with foil. Stir chocolate and butter in heavy pan over low heat until melted and smooth. Remove from heat. Cool to lukewarm, stirring often.
Using electric mixer, beat eggs yollks and 6 tablespoons sugar in a large bowl until mixture is very thick and pale, about 3 minutes. Fold lukewarm chcoclate mixture into egg mixture, then fold in vanilla extract. Using clean dry beaters, beat eggs whites in a large bowl until soft peaks form. Gradually add remaining 6 tablespoons sugar, beating until medium peaks form. Fold egg whites into chocolate mixture in 3 additions. Pour into springform pan.
Bake cake until top is puffed and cracked and toothpick inserted comes out with moist crumbs attached, about 50 minutes. Cool cake on rack and it WILL fall. ( The part that falls off is sooooo yummy...like chocolate air)
Using small knife cut around pan sides to loosen cake. Remove outside ring and gently press down crusty top to make evenly thick cake. Invert cake onto plate and remove parchment paper.
Make glaze:
Bring cream and corn syrup to simmer in medium pan.( I use the micorwave for this step.) Remove from heat and add chocolate. Whisk unitl melted and smooth.
Spread 1/2 cup galze over top and sides of cake. Freeze until almost set, about 3 minutes. Pour remaining glaze over cake and smooth on sides and top. Chill until glaze is firm about, 1 hour. ( Can be made 1 day ahead.) Cover and store at room temparature. Garnish with chocolate shavings.
Whew, that took awhile to type. This is my youngest's favorite dessert. She wanted it for her graduation party.
