Ah, if only I could make that 1,200 mile trip!:D

In Louisiana, our tomatoes are pooped. It simply way too hot - 96 today in BR. However, we are now planting for the fall crop.

BLTs are such a simple pleasure. I've loved them since childhood. Now another great comfort food when fresh tomatoes won't be available is the grilled cheese. How many variations on this classic can we come up with?

:eek: We might reach 95 degrees tomorrow. It's been hot hot hot this week. Guess where I just got back from? Yup, My Daddys. I got a big ole bag of maters. Some for frying and some for BLT's!!!:love:

Are fresh peaches available in Florida now? In Michigan, our peaches are just coming in (about 2 weeks now)... It's time to cook and freeze over the next month... peach chutney, peach jam, gazpacho, caponata (Italian tomato/eggplant/pepper spread), pesto, apple sauce in early October, and I'm hoping to try hot pepper jelly this year. I wish I could freeze BLTs with sunkissed tomatoes.

Paula, do you have a recipe for caponata? Also do you use green or red bell peppers in your pepper jelly?Thanks

cp: I'll get it for you soon. I'll be looking for the recipe so I can make it up in a few weeks. It freezes quite nicely for about 3-6 months. It gets us through the winter holidays very nicely!
