Day two has been a success, I was at the gym at 5:30 this am because I was busy at work today and a coworker was in from out of town so we had dinner plans. I did my cheerio skim milk bfast, an apple and protein bar for lunch, pineapple then protein bar for snack then had a lovely sandwich on fresh 3 seed bread with ham, havarti, veggies and dijon with a cup of chicken veggie soup and 3 bites of grape walnut blue cheese salad-man that stuff is good! I have a lovely selection of pears, apples or pineapple for a snack before bed. Day two and no one has been injured so that's good, on the downside, only 30 minutes of cardio today but I just got home and a return trip to the gym doesn't jive with my plans to go to bed by 9:30 tonight. I'll be back to a twice gym trip tomorrow!

Day 3 and still no one was injured! I experimented with quinoa instead of brown rice last night-sauteed some onion, green bell and garlic with spices then did half low sodium chicken broth/half water for the box of quinoa (since I read that it reheats well). It's diferent, kinda nutty, softer texture-like soft pasta but not exactly. Sauteed zucchini and yellow squash and did mojo picante pork loin chops in the oven. The quinoa is being touted as the perfect food, it's lowish carb, good bit of protein and other vitamins. I prefer white rice but this isn't a bad alternative considering the good for you factor!

I cook with quinoa frequently. It is a wonderful grain and you are right, very good for you and far better than white rice. I toast it in an iron skillet prior to cooking. I also use amaranth too sometimes - try it! :wave:

And btw, quinoa sprouts EASILY! Sometimes I sprout it and don't bother cooking it - great in salads. I make a wonderful tabouli using quinoa instead of bulgur.

Thanks for the recipe. I have been wanting to experiment with quinoa, but most of the recipes I see are salads with quinoa. Congratulations on being so motivated!

Sounds like it would be a good one pot meal with mushrooms and beef.

I find it very easy to eat healthy in the winter months. Tonight we are having saut?ed dandelion greens with onion and balsamic vinegar and then I will roast cut up sweet potatoes, turnips, onions and bell pepper with rosemary in the oven.

I have a digital pressure cooker so this afternoon I made hummus from scratch and yesterday Cuban Black Beans. I love my veggie 'fajitas' - mushrooms, peppers, onions, zucchini, spinach served with freshly made guacamole and beans.

Cabbages and bok choy cooked with onions and peppers and mushrooms and tamari over brown rice. The list goes on and on......

I do still love a huge salad in the winter months - especially when I make my own dressing out of raw apple cider vinegar, tamari, flaxseed oil and herbs - sometimes I mash in a little avocado too.

PS Just had a mess of organic Florida strawberries. They are so sweet right now that I just ate them plain. YUM!!

I love hummus but I want pita bread instead of veggies with it so not quite as good of a diet choice then!!

I did congris-black beans cooked and then cooked with rice, love it! The recipe called for white rice but I'm going to try it with brown and may try it with the quinoa. I had reheated quinoa and pork loin chop for lunch today and it did reheat really well.

I have been snacking on some really good honeycrisp apples, pears and a pretty good pineapple this week. Strawberries sound wonderful but I haven't found any nice ones this week.

Tonight I'm making sloppy joes with extra lean beef, bell pepper, garlic, onion and jalapenos on whole grain bread and bake some fresh fries-my Fightin' Texas Aggies are in the Cottonbowl so we need game food! I just finished my afternoon walk outside-sadly it's getting cold here tomorrow so outside walks are likely over for a while.

Thanks for the ideas. Sometimes I get into a menu rut. Now if I could just get hubby to eat sweet potatoes ...
