Borago in Grayton Beach is Charming & Delicious

Nostalgic and charming, Borago opened its doors in March of 2000 with the focus of bringing fresh, coastal-Italian cuisine in a modern-trattoria style to SoWal.

Together creatively since 1992, Chef/Owners Michael Dragon and Mark Anton were both educated at the College of Culinary Arts at Johnson & Wales University. In the late nineties a friend invited them down to South Walton and when they caught sight of the hidden gem of a building that is Borago’s bones, they knew it was kismet.

Their goal is consistent, no-frills service in a family-oriented and relaxed environment. As a customer for over 15 years, my admiration for Borago is solely vested in their unfaltering, bliss-inducing food.

“At Borago, we certainly strive for consistency, we have an open kitchen for people to be able to see the crew in action. Guests and the staff really enjoy this aspect of the restaurant," Chef Michael says.

With traditional and creative aspects of Italian food, Borago offers abundant portions of mouthwatering pastas and breads, all made in-house. Some crowd favorites include the Grouper Nicoise, Three Meat Bolognese, and Angel Hair Pasta with Pan Seared Shrimp.

Grouper Nicoise blends influence from the Gulf while keeping it traditional with artichokes, Kalamata olives, tomatoes, haricot verts, whipped potatoes and a white wine butter. Their Three Meat Bolognese is served with cheese tortellini and shaved parmesan and their Angel Hair with Pan Seared Shrimp features prosciutto, basil, olive oil, garlic and a mirror of tomato mascarpone cream.

Borago also offers a full service bar, so grab a seat and indulge. Their friendly bartenders feature crafted cocktails, all made with fresh juices. Check out their famous White Peach Bellini with Svedka vodka, white peach puree, peach liquéur, and topped with prosecco. For dessert, try the richly decadent gelato provided by Italian transplants G.S. Gelato in Fort Walton Beach.

Borago is a perennial favorite of locals and visitors. The level of excellence and consistency is much admired. Borago is open daily year-round, offering dinner service from 5 to 9PM. SoWal Insider Tip: Be prepared to spend a bit of extra time at Borago. Between the intimate bar and the dining room with open kitchen, time just seems to melt away like farm-fresh butter on warm pasta.
